Begin the day with a delicious breakfast at our hotel in Ho Chi Minh City. Take advantage of the morning and wander about the city, beginning in front of the remarkable Saigon Opera House soaking in the energetic atmosphere of Lam Son Square and Dong Khoi Street. Thereafter, take a stroll up Dong Khoi, one of Saigon’s most famous streets, until arriving at the revered Notre Dame Cathedral and the Central Post Office, both built in the late 1800s. After taking a few photos, walk down to Pasteur Street and into Quan An Ngon restaurant to enjoy lunch and watch food being prepared in traditional open Vietnamese stalls.
After lunch, take a turn onto leafy Le Duan Boulevard and check out the historic Reunification Palace, which was rebuilt in the 1960s after an air raid bombing. If there is still time, take a walk through busy Ben Thanh Market to purchase some local sugar cane juice or browse wares from more than 3,000 vendors.
After spending the day under the Saigon heat, return to the hotel and allow our experienced therapists at Xuan Spa to relax and revive the senses with treatments fro m the Mekong. Finish the day with an exciting evening Jeep food tour, which will offer a variety of Saigon flavours.
After breakfast, travel to the Cu Chi Tunnels on a Park Hyatt Saigon tour with private transportation and our experienced driver and tour guide. The famous Cu Chi Tunnels is an elaborate underground tunnel network constructed by Vietnamese resistance fighters during both the French and American wars. Visitors can crawl through some of the safer areas of the tunnels and view command centres and booby traps.
Upon returning from the Cu Chi Tunnels, relax at Hoa Tuc restaurant, located in a French courtyard across the road from the hotel, which offers delicious contemporary Vietnamese food. Be sure to try the fried rice with lotus seeds, one of the restaurant’s specialties. After lunch, walk back to the hotel and relax by the pool in a personal cabana while enjoying refreshing beverages.
Finish the day with a traditional meal at Cuc Gach Quan, also known as Brick restaurant. Enjoy the restaurant’s atmosphere and countryside-style food, served in a traditional Vietnamese terrace house, while viewing the antique ceramics and woodwork on display. Diners’ favourite dishes include the fresh spring rolls and tofu with chilli and lemongrass. After dinner, take a 15-minute taxi ride to Chill Sky Bar for an after-dinner cocktail and incredible views of Saigon.
On the final day in Saigon, start with a lovely breakfast in Opera, sitting outside on the open terrace, before traveling to Cai Be and Vinh Long in the Mekong Delta.
Sit back and enjoy the comfort of a luxury Mercedes S-Class while traveling to Vinh Long, deep in the Mekong Delta. Cruise through beautiful landscapes along the river and observe typical rural life in the Delta. Enjoy travelling on a sampan through the evergreen islands of the Mekong River, crisscrossed with countless canals, via a large network of meandering tributaries. Walk through tropical fruit gardens and finish with a traditional lunch. After lunch, travel by boat to the wholesale Cai Be floating fruit and vegetable market, followed by a visit to some home factories that produce rice paper, puffed rice and coconut candy. To end the afternoon, walk along Cai Be’s riverside before traveling back to Ho Chi Minh City.

On the final night in Saigon, take a stroll to the famous Opera House and enjoy the AO show. Experience a Vietnamese performance involving amazing acrobatics and storytelling from the countryside. While sitting in one of the most atmospheric restaurants in Saigon, watch our experienced chefs in several open kitchens prepare fresh seafood, imported meats and authentic Vietnamese dishes. Finish the night with a signature martini at 2 Lam Son while enjoying the vibrant atmosphere and funky music.
