  • The Cellar Door: The perfect pre-dining destination to sit and discover new wines selected personally by Hotel Sommelier Marie and stocked exclusively at Square One restaurant using Coravin wine preservation system.
  • Private Dining Spaces: Square One boasts three private dining spaces, each one utilizing various textiles including leather, marble and wood to create three uniquely chic spaces that are perfect.

Born in South Burgundy and raised in Provence, Chef Alexandre Durand is a former protégée of world renowned chef Alain Ducasse. “My culinary philosophy can be summed up in three principles, namely ‘delicacy’, ‘finest ingredients’ and ‘consolidation of tradition and modernity’, remarked Chef Alexandre. With the original recipe from his grandfather, Chef Alexandre is proud to introduce his Pate En Croute, a pork and foie gras terrine at Square One, promising to fill guests with a sense of awe.

Born and raised in Ben Tre Province, Chef Tran Van Son has throughout his career been inspired by the diversity of Vietnam’s regional flavours. Chef Son perfected the art of Vietnamese cuisine while working on Phu Quoc Island, wowing guests with deluxe versions of traditional Vietnamese dishes. His secret lies in handpicking the freshest local ingredients to reflect an exquisite taste of the finest Vietnamese cuisine. “It was always my dream to work in the kitchen, playing with ingredients and challenging myself for the best of Vietnamese cuisine. With the carefully sourced produce and passionate culinary team, we hope to win the hearts of all guests we serve.” said Chef Son.
